I’ve always been a rich chocolate dessert kinda gal. My husband, not so much.
Whenever we decide to splurge for dessert when we are out, it’s always tricky finding something we both like. I’m always into the triple chocolate cakes or dark chocolate brownie while he wants the peach crisp or an affogato.
We usually compromise by getting one of each. Marriage…amirite?
Well this homemade chocolate peanut butter fudge chunks recipe is all for me and my dark chocolate lovin’ friends.
It’s decadently rich, has so much depth, and though it’s sweet, it’s not over the top sugary. Because it’s so rich, a small chunk should satisfy your sweet tooth. But if you do go a little overboard, it’s ok because it’s made of mostly real-food.
Now, I’m not going to tell you these are help-you-get-that-six-pack healthy. They aren’t and won’t. But for a dessert these are a healthy-ish stand-in for your favorite processed treat.
The health potential is in the ingredients.
Peanut butter- I suggest buying a high quality peanut butter that only has peanuts as an ingredient.
Dark chocolate chips- Find a brand that has minimal ingredients and has 70% cacao or higher so you can still receive some benefits of the antioxidants in the cacao.
Maple Syrup- I love using maple syrup as my sweetener because when it comes directly from the tree without processing it’s about as natural as you can get. Make sure you find 100% pure maple syrup.
Coconut milk- I’m talking full fat coconut milk that you get from the can, not the processed coconut milk you would pour on cereal.
Enjoy a small chunk of this yummy fudgey dessert after dinner or whenever your sweet tooth is calling.
Chocolate Peanut Butter Fudge Chunks Recipe
Makes about 8 large squares
Takes about 10 minutes to make + 60 minutes of freezing time.
Ingredients:
1/2 cup creamy peanut butter
1 teaspoon vanilla extract
1/4 teaspoon sea salt
2 tablespoons coconut oil
1 1/2 cups dark chocolate chips (70% cacao or higher)
1/4 cup 100% pure maple syrup
1/4 cup full fat coconut milk
1/4 cup chopped almonds (or nut of choice)
Directions:
Line a medium sized pyrex pan or a loaf tin with parchment paper. Set aside.
In a medium sized bowl, stir the peanut butter, vanilla extract, and sea salt so it’s nice and mixed. Set aside.
In a medium saucepan over medium-low heat, warm the coconut oil. Add the chocolate chips, maple syrup, and coconut milk. When the chocolate starts melting, stir continuously until it is completely liquified. Turn off and remove from heat.
Pour the chocolate mixture into the bowl with the peanut butter mixture. Stir until smooth.
Pour the chocolate/peanut butter mixture into the prepared pan. Top with chopped nuts.
Place in the freezer until it sets, about 60 minutes. Remove, chop into the chunks you want and place in a sealed container back into the freezer, pulling a chunk out whenever you want something sweet!
