Do you ever find yourself invited to a potluck or BBQ and have NO CLUE what to bring?
I try to consider if people are vegan, gluten free, paleo, vegetarian, lactarian, pescatarian, or some other “diet of the minute”-arian. Trying to appease everyone can make my head-spin.
Enter Cowboy Caviar.
This may not be perfect for every diet and eater, but it is as safe a bet as you can get.
This is an easy snack or hors d’ oeuvres to throw together and is a major crowd pleaser. I often bring it to get togethers, but I also enjoy it at home in a lettuce wrap as a meal. No baking, cooking, or heating necessary, just fresh ingredients coming together to make a satisfying treat.

Cowboy Caviar Recipe
Makes about 6-8 side size servings
Ingredients-
1 can black beans
1 can black eyed peas, or other favorite beans
1 can shoe-peg corn (could use regular corn if needed)
2 tomatoes, diced
1-2 avocados, diced
2 diced green onions
3/4 cup chopped cilantro
Juice of 2 limes
Dressing-
2 cloves garlic, minced
1 teaspoon cumin
1/4 cup olive oil
1/4 cup red wine vinegar
1/2 teaspoon salt
1/4 teaspoon pepper
Directions-
Add all ingredients to a large bowl.
Combine all dressing ingredients to a mason jar or small bowl and shake/whisk.
Add dressing to the rest of the ingredients and mix.
It is best to let it sit for 30-60 minutes to absorb the flavor, but if you can’t wait, it can be enjoyed right away.
Great eaten on it’s own, with tortilla chips, rice crackers, or in lettuce wraps.
Keeps well for about 3-4 days.
Tip: If you are keeping this for a few days, place the avocado pit in the bowl to keep the avocado from turning brown.
