Chia seed pudding is something I heard about a few years ago when I was toying with the idea of becoming a vegan. Chia seeds are a great source of protein and contain a healthy dose of Omega-3 fatty acids.
When soaked for even a few minutes, chia seeds start to form a gel-like consistency, giving it a fun texture. Soaking the seeds are also beneficial to our health. It makes the seeds easier to digest, and allows our bodies to absorb more of the nutrients the small seeds pack.
This chia seed pudding is yummy on top of oatmeal, perfect for layering with yogurt and granola for a parfait, or as a snack on it’s own, topped with your favorite fruit. Have fun experimenting!

Ripe banana slices(I exclude the honey), raspberries, cherries, cinnamon, and coconut, as pictured.
Blueberries and homemade granola, making it a fun take on a parfait.
*Keeps well in the fridge for about 3 days.
